Sweet Potato Hash with Caramelized Onions, Sausage, and Eggs

Ingredients:

  • 2 sweet potatoes, peeled and diced

  • 1 onion, thinly sliced

  • 2 tablespoons olive oil

  • 1/2 pound sausage, crumbled

  • 4 eggs

Instructions:

Heat olive oil in a large skillet over medium heat


Add sliced onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 20 minutes


Remove from skillet and set aside


In the same skillet, add diced sweet potatoes and cook until they are tender and slightly crispy, about 15-20 minutes, stirring occasionally


While sweet potatoes are cooking, in another skillet, cook the crumbled sausage until it's browned and cooked through


Push the cooked sweet potatoes to one side of the skillet, and crack the eggs into the other side


Cook the eggs to your desired doneness, either sunny-side-up or over-easy


Season the sweet potatoes with salt and pepper to taste


Mix in the caramelized onions and cooked sausage


Serve the sweet potato hash topped with the cooked eggs

  • 4 Italian sausages, sliced

Instructions:

Ingredients:

  • 1 cup spinach leaves

  • 1/2 cup kale leaves

  • 1/2 cucumber, peeled and sliced

  • 1 green apple, cored and chopped

  • 1/2 lemon, juiced

  • 1 tablespoon honey optional

  • 1 cup almond milk

  • Ice cubes

Instructions:

Wash the spinach and kale leaves thoroughly


In a blender, combine the spinach, kale, cucumber, green apple, and lemon juice

Ingredients:

  • 6 slices of bacon

  • 1 cup shredded cheddar cheese

  • 1/4 cup almond flour

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon dried oregano

  • 1 egg

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

A tasty fruit tart with apricot preserves on top and a mix of fresh fruits on a crisp pie crust.

Ingredients:

  • 1 store-bought pie crust

  • 2 cups mixed fresh fruits such as berries, sliced kiwi, sliced peaches

  • 1/4 cup apricot preserves

  • 2 tablespoons water

Instructions:

Preheat the oven to 375F 190C


Place the pie crust in a tart pan, pressing it gently to fit the shape of the pan


Prick the bottom of the crust with a fork to prevent it from puffing up while baking


Bake the crust for 12-15 minutes or until lightly golden brown


Let the crust cool completely


Arrange the mixed fruits over the cooled crust


In a small saucepan, heat the apricot preserves and water over low heat until melted and smooth

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup chopped green onions

  • 1/4 cup chopped fresh cilantro

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • Corn tortillas gluten-free, cut into strips

Instructions:

Preheat your oven to 375F 190C


In a large mixing bowl, combine shredded chicken, black beans, corn, enchilada sauce, cheddar cheese, Monterey Jack cheese, green onions, cilantro, cumin, chili powder, salt, and pepper


Mix well


In a baking dish, spread a thin layer of the chicken mixture
